Gusto by Heinz Beck is the Conrad Algarve's signature gourmet restaurant, serving exquisite Mediterranean cuisine in an elegant yet relaxed and lively ambience, with lovely views across the Conrad grounds and Algarve countryside. Holder of a Michelin star, Gusto offers 7 and 9 course tasting menus and an à la carte menu, complemented with premium wine pairing.
Concept
Gusto at Conrad Algarve, named after Conrad Hilton's father Augustus (and incidentally a nice play on the Portuguese word gosto which means taste) is proud to have at its helm Chef Heinz Beck. One of Europe’s most esteemed chefs, he has created an elegant Mediterranean dining experience at Gusto that is befitting of a 3-Michelin star chef. With a focus on the excellent local produce, with fresh and vibrant flavours, the innovative menus deliver an outstanding dining experience.
Gusto Menu
Resident chef Stefano Bulla, who has worked with Heinz Beck at 3 Michelin star La Pergola, and brings to Gusto an harmonious blending of Italian cusine techniques and Portuguese vibrant flavours and traditions.
The menus – which change regularly to reflect the seasons and fresh produce – include the à la carte menu and the option of 7 and 9 course tasting menus.
Tasting dishes include:
- Scarlet prawn, curcubits and coconut milk
- Marinated amberjack, almond tempeh and chufa
- Tortellini à la “Genovese”, cime di rapa and black truffle
- Lamb saddle, salsify and morels
The à la carte menu features:
- Fagottelli Carbonara, Chef Heinz Beck's signature dish
- Veal Loin, baby gem and mustard seeds
- Risotto “scapece” with baby squid and saffron
Wine Pairing
Gusto has an extensive wine list featuring Portuguese and international wines. The Sommelier is on hand to offer suggestions to complement your meal choices. Wine pairing is available with the tasting menus.

Gusto features an open kitchen allowing diners to witness the performance of balletic precision and grace that produces gastronomic marvels, where expert craftsmanship and a passion for excellence shine. The open kitchen creates a connection between diners and chefs, and fosters a relaxed atmosphere.
Gusto Bar
The award-winning bar offers a true cocktail bar experience with champagnes, premium spirits and legendary cocktails created by the mixologists. Elegant and sophisticated, each cocktail here tells a story.
